🍊 WHY DOES ORANGE PEEL TASTE BITTER WHEN THE ORANGE IS SWEET?

Have you ever tasted orange peel and immediately thought:

The inside of an orange can be juicy, sweet and delicious.

But the peel?

Bitter. Strong. Almost shocking! πŸ˜…

So what is going on?

🍊 IT'S ALL ABOUT THE DIFFERENT PARTS OF THE FRUIT.

The colourful outer layer is called the flavedo.

This is where you find many of the orange's aromatic oilsβ€”the reason orange zest smells so wonderfully citrusy.

Then underneath is the white pith, also called the albedo.

The pith is edible, but it can be particularly bitter.

And this is why your orange peel doesn't taste like orange juice!

The different parts of the fruit contain different compounds, so they don't have the same flavour.

Here's the food-science lesson:

Bitter does NOT automatically mean poisonous.

And something being edible doesn't mean every part will taste pleasant.

That's why cooks often use small amounts of orange zest rather than eating a whole orange peel.

🍊 Pith = edible + more bitter
🍊 Fruit flesh = juicy + sweet
