Kédjénou or kedjenou is one of the most popular dishes in Côte d'Ivoire. It's a tasty and astoundingly easy to make recipe, with many variations.
Often made with chicken or guinea fowl, it is traditionally prepared with bushmeat (game meats) and slowly cooked in an earthenware jar that is sealed with banana leaves and string, a technique very close to the steaming technique used in North African tagines.
It is presumed that this dish originated from Baoulé farm workers and hunters. All the more that the word « kedjenou » would mean « shaking inside » in Baoule according to sources. This would refer to the fact that the pot is shaken frequently so that the chicken or sauce does not stick to the bottom of the pot.
