Argentina has reached the World Cup semi-finals for a second time in a row. Such achievement calls for a meal full of flavor and history: Locro!.

Locro is the dish Argentinians cook on May 25th and July 9th, their national holidays.

Locro is a hearty, thick South American stew with ancient roots in indigenous Andean culinary traditions. It has pre-Columbian origins. The Andean peoples of what is now northern Argentina, Bolivia, and Peru were cooking versions of this corn-and-bean stew for over a thousand years before the Spanish arrived. After European colonization, beef, pork, and chorizo were added. The result is a delicious dish Argentinians today consider their national meal.

The term "locro" comes from the Quechua word ruqru, which means "stew" or "mix".
