The legend behind Crêpe Suzette is as fascinating as the dish itself. It’s said that the creation of this dessert was a happy accident, happening in 1895. The story goes that a young chef named Auguste Escoffier, working at the Café de Paris in Monte Carlo, was preparing a crêpe for an important guest, a young woman named Suzette. During the preparation, an accidental mistake with the liqueur caused flames to burst over the dessert, creating a spectacular effect and a unique taste. Escoffier decided to name the creation "Crêpe Suzette" in her honor.
Some also claim that Escoffier created this dish for a performance in honor of the Prince of Wales, who later became Edward VII, though there is no definitive proof of this. In any case, Crêpe Suzette quickly became one of France's most popular dishes.
