Chebakia is a traditional Moroccan pastry made of dough strips woven into an intricate flower shape. Deep-fried until golden, it is soaked in warm honey or orange blossom syrup and generously sprinkled with toasted sesame seeds. It has a crunchy exterior, a chewy, soft interior, and a fragrant, warm spiced flavor.
The name comes from the Arabic word for "window" or "grate" (from shabak). Cooks cut rectangles into the dough, make lengthwise slits, and meticulously weave and pinch the strips together to resemble a blooming rose or flower.
Chebakia is an iconic staple during the holy month of Ramadan, often served alongside a warm bowl of harira (traditional lentil soup) to break the fast at sunset. Because weaving the dough by hand is a highly time-consuming process, families and friends traditionally gather in large groups to prepare it together. It is also a staple at weddings and major holidays, frequently paired with mint tea or coffee.
