Caruso sauce is a warm, thick, creamy sauce in Uruguayan cuisine. It is made with heavy cream, diced ham, grated cheese, mushrooms, and a touch of beef extract. This rich, savory sauce is most famously served over stuffed pastas like cappelletti, tortellini, or ravioli.
The sauce was invented in Montevideo, the capital city of Uruguay, in the 1950s by chef Raimondo Monti at the restaurant "Mario y Alberto". He created it to bring an exciting new variation to the pasta dishes brought over by Italian immigrants. He named it in honor of Enrico Caruso, the legendary Italian tenor who had toured the region.
