PastΓ©is de BelΓ©m or Pastel de Nata are a very traditional Portuguese egg custard tart. It consists of a shatteringly crisp, flaky puff pastry shell filled with a rich, velvety, creamy egg-yolk custard and baked at extremely high temperatures to achieve characteristic caramelized, blistered dark spots on top.

These tarts were invented before the 18th century by Catholic monks at the JerΓ³nimos Monastery in the BelΓ©m district of Lisbon. The monks used large quantities of egg whites to starch their religious habits and used the leftover egg yolks to create various rich pastries. When the monastery closed, they sold the recipe to a nearby sugar refinery, and the descendants of that bakery still produce them today. They're extremely popular worldwide.
