Elotes, widely known as Mexican street corn ,is a popular dish consisting of corn on the cob that is grilled or boiled, slathered with a creamy sauce, and coated in cheese and different spices. The combination yields a perfect balance of smoky, sweet, savory, creamy, and tangy flavors.

Another fun version of this dish is Esquites or Elotes en vaso (literally translated as "corn in a cup"), a popular Mexican street food consisting of warm corn kernels shaved off the cob and served in a cup, generously mixed with a creamy, flavorful blend of mayonnaise, butter, cheese, lime juice, and chili powder.
