This is Kottu (often called Kottu Roti), Sri Lanka's most beloved street food. πŸ‡±πŸ‡° When I was in Sri Lanka, I had this every single day! It's just very addictive!

Made by chopping up flaky roti and stir-frying it with vegetables, eggs, meat, and a blend of aromatic spices, Kottu is famous not only for its incredible flavor but also for the rhythmic clanging sound of metal spatulas hitting the grill as it's prepared fresh on the street.

The best part? It's actually not that difficult to make at home.

How to make Kottu:

1. Cut roti or flatbread into small strips.
2. Stir-fry onions, garlic, and your favorite vegetables.
3. Add cooked chicken, beef, or eggs (optional).
4. Mix in curry powder, chili, and other spices to taste.
5. Add the roti strips and toss everything together until well combined.
6. Cook for a few more minutes and serve hot.

Serving it with chicken curry is even better!
