Without data entry professionals, many businesses would literally lose money daily.

A hospital that enters the wrong patient code gets wrong result. A bank with dirty transaction records faces fines. A school that misfiles enrollment data loses funding. A logistics company with inaccurate tracking loses trust. An e-commerce business with bad inventory data oversells, under-ships e.t.c

None of those industries are running on gut feelings. They're running on clean, accurate, consistently entered data. And somebody has to do that.
